How to Braai? – Chisa Nyama

Today is Braai day in South Africa. National Hertige day. One thing most of us in South Africa have in common is we like our braai. Some lekker braai vleis with pap and chakalaka.. eish.. that really hits the right spot.. my Bachoo i.e 5 year old daughter loves braai time. she loves the smell she said today but most of all she loves boereghos. That is a bachooism for boerewors. It is a play on words. Ghos usually meaning meat in one of the indian dialects. Instead of Boerewors the once she asked us for boereghos and it stuck..

 

 

 

How to start a fire for a braai?-

When sparking your grill don’t forget how you used to light a camp fire. Primitive man has passed this innate skill for generations and fires were always to be built in the pyramidal shape. It is this that most people do not do and thus will have issues when starting the fire.

  • Clean braai grill with raw onion
  • Make sure you set up the coal like  in a pyramid.
  • insert three firelighters evenly, yes EVENLY! into the pyramid and
  • light em up.
  • Leave for 20 to 30 full minutes, the flames should have died down at that point…and if you have followed these instructions- the charcoal should have turned white.
  • If you get this far you are almost done… now spread the charcoal more evenly around the barbecue rack using a barbecue tool (ok…a barbeque tool for this purpose is anything you can get your hands on to get the job done!).
  • Wait for the flames to die down..(Else, you will get food that does not smell very nice.)This is because they are soaked in kerosene
  •  Don’t cover all of the base of the rack with charcoal..

Braai Marinades

for more marinades click here – I am usually lazy so I buy the meat marinated already usually with sweet sour marinade.

 

Rubina Jogee-Chavoos Salt and pepper chops

Marinate 1kg chops in +/-
1 tsp salt
1 tsp black pepper
1 tsp garlic flakes
1 tsp ground dhania
1 tsp steak and chops spice
1 tsp barbeque spice
4 tbsp cooking oil
4 tbsp lemon juice or vinegar
4 tbsp Worcester sauce

Rubina Jogee-Chavoos Saucy Chops

Marinate 1kg chops in +/-
1 tsp salt
1 tsp red chillies
1 tsp mustard powder
1 tsp black pepper
2 tbsp white vinegar
1 tbsp lemon juice
1 tbsp tomato sauce
1 tbsp Worcester sauce
1 tbsp HP sauce

Chakalaka recipe

Braise onion

add tomatoe in cubes

1 tsp salt

1 tsp dhana jeeru

1 tsp chillies

few tablespoons mustard

braise all together

optional add baked beans

 

Pap – Mielie meal

put 2 cups miele meal in a pyrex dish

add 2 tsp salt

stir

add 4 cups water

close pyrex dish

put in microwave

press pap button

when you hear the beep take out and stir..

if still not done press pap button again..

Potato salad

Microwave baby potatoes in water in a pyrex. make wholes with fork in potatoes and put some salt

Press potato bake button

once done, remove water cut potatoes in half

add mayonaisse, origanum, or whatever season you want

Stir

Sweet corn

open can of sweet corn

place in dish

Serve
