Madala Freshly Blogged Nostalgia – Tuna lettuce clams

Ok so Ask Nanima was chopped from the  freshlyblogged  competition two weeks ago. What a shock this was as we won the first round with our Lekker thai potjie  and we were in the top 3 through out the contest. Obviously  votes did not count and what the judges decide was final. It was a huge custard misunderstanding and a miscommunication. I was only sad Madala’s brightspark idea of  CHAKALA BUNNY CHOW AND SPICY CHAI did not get the attention it deserved. This was a winner I thought and one of the best efforts I made. argh anyway, I thought  my weekends were finally mine again UNTIL Madala seemed to have some freshlyblogged nostalgia. For the past weeks we have been going to Pnp buying weird ingredients and concocting recipes.  Today he bought Tuna, Avocadoes, lettuce  and eggs and asked me to make this recipe. I started boiling the eggs and than it seemed like he wanted it a certain way, since I was really not liss  to experiment anymore with weird ingredients after being freshlyflogged, I told Madala, the kitchen is all yours..

Tuna Lettuce Clams

When  Madala mentioned boiled eggs in  the filling I was not so keen on the recipe, I thought I will have all my ingredients separate thanx not a mixed masala concoction served with some 2 minute noodles.

But than I tasted this mixture and it was lekker. Bravo Madala. The lettuce clam idea was oulik. Tasted nice in the roll as well. When it was toasted it was delicious, like a gourmet sandwich you would buy from a restaurant.

Tuna Lettuce clam Recipe

1 peeled avocado smashed into pieces

1 boiled egg deshelled and smashed into pieces

1 tin tuna drained

10 small pickled onions

2 tablespoon mayonaise

lemon juice to ensure avos don’t go brown

add salt and pepper  or your favourite seasoning to taste

optional  feta cheese, gherkins or olives

Method

Mix smashed avo, eggs and mayo. Drain the tuna so it is dry and has no liquid. Add tuna into mixture. Add pickled onions.

place lettuce pieces on a plate. spoon filling and close with another lettuce piece on top. Voila Tuna Lettuce clams.

Filling can be served in roll, bread. Best eaten toasted with some feta.
